Quinoa and Black Bean Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the quinoa is tender and the water is absorbed.
  2. Fluff the quinoa with a fork and transfer it to a large bowl to cool.
  3. Add the black beans, bell peppers, red onion, avocado, and cilantro to the bowl with the quinoa.
  4. In a small bowl, whisk together the olive oil, lime juice, garlic, salt, and pepper.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Serve immediately or refrigerate until ready to serve.

This salad is a healthy and delicious combination of quinoa, a protein-rich grain, black beans, a great source of plant-based protein, and fresh vegetables. The salad is also vegan, gluten-free, and high in fiber.
