Quinoa and Black Bean Salad
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the quinoa is tender and the water is absorbed.
- Fluff the quinoa with a fork and transfer it to a large bowl to cool.
- Add the black beans, bell peppers, red onion, avocado, and cilantro to the bowl with the quinoa.
- In a small bowl, whisk together the olive oil, lime juice, garlic, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve immediately or refrigerate until ready to serve.
